Completely wild, cold-smoked Alaskan Salmon, then sliced by hand. This species is nothing like "traditional" salmon in any way. Its color is deep red. The meat of this fish is very tender. It contains little fat as befits a wild fish. Slicing into thin slices is very difficult because the salmon literally falls apart under the pressure of even a very sharp knife. So the slices of this salmon we offer are thicker.
To prepare this salmon we use smoke with a temperature below 25 degrees Celsius, obtained from a combination of cherry and alder wood. In the last stage of smoking, dried seaside turf is also added. It provides a unique color and flavor.
